Hi-Country Sandwich & Snack Style Sausage Kits -These sausages are a hunter's favorite quarry and are found in many a hunting camp. Hi-Country Sandwich & Snack Sausage Kits include traditional flavor favorites; Timber Ridge Old Style Salami, and Gold Rush Summer Sausage. Each of which has been uniquely enhanced with key ingredients ranging from cracked peppercorn in our Old Style Salami, to whole mustard seed in our Summer Sausage.
Each kit contains string tied jumbo-sized fibrous casings, twist ties, cure packets, and our useful detailed instruction booklet with colored photos that depict each step of the home processing procedure. The instruction booklet makes special mention of thorough mixing to extract meat proteins for a tighter bind in these types of sausages. Our specially formulated seasonings utilize slightly higher salt content to help extract these proteins. Success is certain when using these Hi-Country blends and following our complete instructions.
Enough seasoning to boldly flavor up to 30 lbs. meat! Each kit contains one 13.8 oz (391g) seasoning packet, two .63 oz (18g) cure packets, seven jumbo fibrous casings (fill diameter of 3.25"" x 19"" length and holds approx. 4 lbs.), and seven twist ties. Cody of Taylorsville, UT - April, 22 2013:This kit only seasons 30 lbs of meat, so you'd better buy 2 or 3. I went through the first 30 lbs pretty quick! Excellent flavor when using 50:50 venison:pork blend. Hickory smoked is amazing but it's also good when made in the oven. My only complaint is that they don't give you quite enough casings. I bought some extra but you could make the last 5 lbs in a loaf pan or something.
