The CRKT 7" fillet knife has a flexible 5Cr15MoV stainless steel blade with an extended tang that reaches nearly to the butt of the grip.

The CRKT 7" fillet knife has a flexible 5Cr15MoV stainless steel blade with an extended tang that reaches nearly to the butt of the grip. For improved performance, CRKT hand-grinds scallops into the blade to create air pockets so the fillets will not stick to the blades as you cut?a feature normally found only on much more expensive slicing knives. The handle is molded TPR with a fishnet texture and a lanyard hole. Includes an injection molded polypropylene sheath, fitted to grip the knife securely, with belt loops and plenty of drain slots. The 7" Fillet has a 7.25" blade, and is an ideal size for steelhead, salmon, walleyes, and other large lake and ocean fish. Covered by the CRKT Limited Lifetime Warranty, this is simply an honest affordable knife. Wash it when you're done, oil it occasionally, and it will be around for years.

This knife was inexpensive so I wasn't expecting much, but it has performed well. I've cleaned several trout and was able to make fillets out of crappie and bluegill. I've spent more on fillet knives in the past, but am not sure I got more.
